As cases of Cyclospora continue to spread this summer, health officials are reminding the public about the best ways to avoid the diarrhea-causing parasite. The microscopic organism, often found in imported fresh produce like cilantro, raspberries, and salad mixes, has caused outbreaks in multiple states. While the infection is not typically life-threatening, it can lead to weeks of watery diarrhea, stomach cramps, and fatigue.
One common question is whether cooking or vinegar can kill Cyclospora. According to health experts, thorough cooking at high temperatures does destroy the parasite. However, the problem is that many foods linked to outbreaks are eaten raw. Washing produce with water alone is not enough to remove Cyclospora, as the parasite can cling to crevices in leafy greens and fruits. Some people try soaking produce in vinegar or acidic solutions, but officials caution that this is not a reliable method. The parasite's protective outer shell can survive brief exposure to vinegar, and the concentration or contact time needed to kill it is not consistent in home kitchens.
To reduce risk, health officials recommend buying produce from trusted sources, washing all fruits and vegetables under running water while scrubbing firm-skinned items with a brush. Cooking vegetables to an internal temperature of at least 145 degrees Fahrenheit is also effective. For high-risk items like imported berries or fresh herbs, some experts suggest blanching or freezing them, though freezing may not always kill the parasite completely.
Symptoms of Cyclospora infection usually appear about a week after exposure. If you experience prolonged diarrhea, nausea, or low-grade fever, see a doctor. The infection is treatable with specific antibiotics, but it is not something that clears up on its own quickly. As summer produce season peaks, staying aware of recalls and washing produce carefully are the best defenses.
